Label Rouge products are food and non-food items that, according tot the French Ministry of Agriculture, have a specific set of characteristics establishing a superior level to that of a similar current product. In 1992, Scottish salmon was awarded the Label Rouge quality mark, particularly with regards to taste.
To obtain this recognition, the salmon is held to a very stringent set of standards throughout the entire production chain. This included farming, feed, processing and distribution. The Scottish Label Rouge salmon is farmed in the pristine Loch Duart fjord. The maximum stocking density in these seawater pens is 1,5% salmon, which means the salmon has an abundance of space to grow. Due to this freedom of movement, the flesh contains a maximum of 16% lipid.
