Ingredients
6 slices of smoked salmon
1 medium zucchini, thinly sliced – Olive oil, for frying
150g cream cheese, softened
Fresh dill, chopped
Salt and pepper, to taste
Lemon zest, from 1 lemon
Toothpicks, for securing rolls
Directions
- Heat some olive oil in a skillet over medium heat. Add the thinly sliced zucchini and fry for a few minutes on each side until they are lightly browned and tender. Remove from the skillet and let them cool.
- In a bowl, mix the softened cream cheese with chopped fresh dill, lemon zest, salt, and pepper.
- Lay out a slice of smoked salmon on a flat surface. Spread a thin layer of the cream cheese mixture over the salmon.
- Place a few pieces of fried zucchini on top of the cream cheese layer.
- Carefully roll up the smoked salmon with the cream cheese and zucchini, creating a tight roll.
- Secure the roll with a toothpick.
- Repeat the process for the remaining slices of smoked salmon.
