Ingredients

  • 6 slices of smoked salmon

  • 1 medium zucchini, thinly sliced – Olive oil, for frying

  • 150g cream cheese, softened

  • Fresh dill, chopped

  • Salt and pepper, to taste

  • Lemon zest, from 1 lemon

  • Toothpicks, for securing rolls

Directions

  • Heat some olive oil in a skillet over medium heat. Add the thinly sliced zucchini and fry for a few minutes on each side until they are lightly browned and tender. Remove from the skillet and let them cool.
  • In a bowl, mix the softened cream cheese with chopped fresh dill, lemon zest, salt, and pepper.
  • Lay out a slice of smoked salmon on a flat surface. Spread a thin layer of the cream cheese mixture over the salmon.
  • Place a few pieces of fried zucchini on top of the cream cheese layer.
  • Carefully roll up the smoked salmon with the cream cheese and zucchini, creating a tight roll.
  • Secure the roll with a toothpick.
  • Repeat the process for the remaining slices of smoked salmon.
  • Arrange the rolls on a serving platter.
  • Garnish with additional chopped dill and lemon zest if desired.
  • Serve the smoked salmon rolls as an elegant appetizer or party snack.
